This Snowy Mooncake Reconstructed Salted Egg Yolks recipe is one part of my Snowy Mooncake 冰皮月餅 recipe. I separated all the different sections so that you may pick and choose between your favourite skins, fillings, and shapes. To mix and match, here are the links to each:

Snowy Mooncake Reconstructed Salted Egg Yolks

It was important for me reconstruct the salted egg yolks as the rounded yolk is a representation of the full moon, which is symbolic to the Mid-Autumn Festival.

Ingredients
  

  • 5 Whole salted egg yolks I used frozen ones that come in pack of 10
  • 20 g Unsalted butter , melted (approx. 4 tbsp)
  • 1 ½ tbsp Milk powder (whole or skim)
  • 20 g Condensed milk (2 tbsps.)

Instructions
 

  • Steam salted egg yolks for 10 minutes on high heat
  • Roughly mash salted egg yolks

  • Put into food processor
  • Add 20g unsalted butter, 3 tbsp milk powder and 20g condensed milk in food processor

  • Blend until mixed well

  • Roll into your desired size balls and place on parchment paper and freeze for one hour before rolling them inside the filling

    Your ingredients show 20g for butter and condensed milk but your instructions state 40g. Please confirm which is correct.

      Hi Kelly, I just noticed this last night as I was making my batch of mini egg yolks. The ingredient list is correct, the instructions were wrong. Sorry for the oversight! The instructions have been corrected. Thanks for letting me know! Happy Mid-Autumn Festival!
