The Snowy Mooncake Sweet Potato White Lotus Seed Paste 甜薯白蓮蓉 is one part of my Snowy Mooncake 冰皮月餅 recipe. I separated all the different sections so that you may pick and choose between your favourite skins, fillings, and shapes. To mix and match, here are the links to each:

Snowy Mooncake Sweet Potato White Lotus Seed Paste 甜薯白蓮蓉

This is a super easy filling for Snowy Mooncakes. I use store-bought white lotus bean paste which I find very sweet. Adding sweet potatoes to it gives a creamy texture to the filling, makes it healthier, cuts down the sweetness and much more economical.
This recipe makes approx. 420g. You can make 21 Snowy Mooncakes 50g each; based on 25g skin, 5g yolk and 20g Sweet Potato White Lotus Seed Paste filling. If you want to make your mooncake a different size, adjust the ingredients accordingly.

Ingredients
  

  • 220 g Sweetened white lotus seed paste , ready to eat (白蓮蓉 bái lián róng)
  • 200 g Sweet potato , any colour (you should get approx. 150g after peeling)

Instructions
 

  • Peel sweet potato and slice into 15mm thick slices

  • Place onto steaming pan
  • Steam for 20 minutes on high heat
  • Roughly mash sweet potatoes until smooth

  • Put into food processor with 220g white lotus seed paste and blend well

  • Ready to be used when cooled If you want it sweeter, you can add more lotus seed paste
