My recipe for Beer and Calpico Jelly 啤酒可爾必果凍 began during my first time having beer jelly at a Japanese restaurant in Vancouver, Canada over 20 years ago. That restaurant is long gone and I hadn’t seen beer jelly anywhere else so far. I’m not a big fan of beer, but they put it in this tiny beer mug that was super cute! Plus, at the time, I had just graduated from University, got a job and the world was my oyster…good times!
Last year, I went to a friend’s house for dinner and someone mentioned that mixing beer and Calpico tastes really good. And since I don’t really like the bitterness of beer, I really liked the beer and Calpico mixture! I suddenly remembered beer jelly and how the Calpico would make a great foam for it! So, I tried making it a few times, it tasted good, but I couldn’t get the Calpico to stay foamy…it kept deflating! I even bought a whipped cream dispenser! It didn’t work because to melt the gelatin, I had to heat the Calpico and the cream dispenser doesn’t work with warm liquids (I should’ve done more research before buying it).

Six months passed and then, one day, I thought of an idea which actually worked! My Calpico foam could stay foamy and stiff! Then, I found these little clear tea cups I had which kind of resemble beer mugs. I used them to recreate my long lost beer jelly, and it’s even better than the one from the Japanese restaurant where I first had it. Mine came out super cute and very yummy too!

Beer and Calpico Jelly 啤酒可爾必果凍 is a fun and impressive dessert or snack for all the grown ups in your life. Best to make enough so each person can have seconds! My friends and I all love it and I’m sure you’ll love it too!

Beer and Calpico Jelly 啤酒可爾必果凍
Ingredients
- 1 litre Beer
I used 3 330ml bottles of Tsingtao Beer but any beer will do - 4 packets Gelatin Powder I used Knox Unflavoured Gelatine (7g per packet) 3 packets for the beer and 1 for the Calpico
- 470 ml Calpico Concentrate aka Calpis Concentrate
- 4 cups Ice
for cooling the Calpico gelatin mixture
Instructions
- Heat 330 ml of the beer in a pot. Add 3 packets of the Knox Unflavoured Gelatine when the beer starts to simmer. Stir and mix until the gelatin melts
- Pour the beer mixture through a sieve and into a large pitcher or mixing bowl
- Pour the rest of the beer into the beer mixture and stir
- Pour the beer mixture into your desired containers, remember to leave room for the foam
- Put the containers in the fridge when they cool down. Start on step 6 after the beer has gone into the fridge for about 15 minutes
The beer needs to solidify a bit before you add the foam - Heat approx. half of the 470 ml of the Calpico Concentrate in a pot. Add 1 packet of the Knox Unflavoured Gelatine when it starts to simmer. Stir and mix until the gelatin melts
- Put ice into a large mixing bowl and set another mixing bowl on top of the ice
- Pour the Calpico mixture into the mixing bowl that is on top of the ice using a strainer
- Pour the remaining Calpico into the mixture and stir well
- Using a hand mixer, beat the Calpico mixture on low until the mixture becomes cool and foamy. It should take around 5 minutes
- Check the beer containers in the fridge. You should be able to see it jiggle a bit when you move it around. This means that you can add the foam
- Spoon-in the desired amount of foam on top of the beer mixture. Be sure to stir the mixture each time before spooning into the containers
I put approx. 3 tbsp of foam in each cup - Put the containers back into the fridge to set. Letting it set overnight gives you the best results
