Watercress and Honey Tea 西洋菜蜜

You may also choose to purée the watercress and then add it back to the tea. I like to just eat some of the watercress, carrots and apricot kernels as I drink the tea.
With regards to the apricot kernels, most people choose a 1:1 ratio for north apricot kernels 北杏 to south apricot kernels 南杏. As far as I know, the north apricot kernels are medicinal and are less fragrant. South apricot kernels are less medicinal and more fragrant and hence both are traditionally used together in small quantities.

  • Wash watercress and dry in colander

  • Cut carrots to your preferred shape and size
  • Rinse dried honey dates and apricot kernels
  • Prepare 80 g rock sugar The sweetness level for my recipe is mildly sweet. You may add more sugar if you like it sweeter

  • Bring 2.5 L water to a boil on high heat. Add all the ingredients except for the rock sugar and honey

  • Bring to a boil. Add rock sugar and turn heat down to low, cover with lid and let it simmer for 45 minutes

  • After 45 minutes, add 4 tbsp honey and serve hot or cold
