Peel and cut potatoes into shoestring size and soak in water for 10 minutes. Let the water drain in a colander and set aside
Marinade shredded pork with ½ tsp salt, ½ tsp sugar, 1 tsp corn starch, 1 tsp Shaoxing wine and mix well. Add 1 tsp oil, mix well and set aside
Heat pan to medium high and add 3 tbsp oil
Add potatoes to the pan and spread the potatoes out and let it fry for 2 minutes without stirring
Flip potatoes over and fry for another 2 minutes
Flip and stir the potatoes until most turn into a golden colour and remove them from the pan
Make sure that the pan is free of any stuck on potatoes
There should still be some oil from frying the potatoes. If there is no more oil in the pan, you’ll need to add a tsp of oil into the pan
Add the pork. Spread evenly in the pan and let it fry for 2 minutes or until golden on one side
Flip the pork over and let the other side fry for 2 minutes
Start stir-frying the pork until 90% done
Add the potatoes pack in. Stir-fry together for 1 minute
Add 1 tbsp of sweet soy sauce in a circular motion into the pan
Stir-fry for another minute
Turn off heat
Add chopped green onions, mix and serve
